White Bean Salad

Yields4 Servings
 1 can white beans, drained but not rinsed
 2 tbsp chopped red onion
 lemon juice
 2 tsp wine vinegar (white or red)
 1 tbsp extra virgin olive oil
 ½ tsp dried herbe de provence (crumbled) or combination of rosemary, tarragon, thyme and lavendar
 1 pinch salt & pepper to taste

Let the onion marinate in lemon jucie. After slicing the onion, squeeze some lemon juice over it and let it sit while you prepare the other ingredients.

Combine all ingredients on a serving plate. You can serve right away if you like, but we recommend chilling for a few hours.

To balance the meal, try adding 1 hard boiled egg, chicken, and vegetables. These provide protein, and vegetable provide fiber and vitamins.
