Pepperoni Pizzadilla

Yields1 Serving
 1 8-inch reduced carb high-fiber flour tortilla
 1 tbsp pizza sauce
 5 slices turkey pepperoni
 2 tbsp shredded part-skim mozzarella
 1 pinch dried oregano
 1 tsp grated Parmesan

Heat large skillet coated with cooking spray over medium heat.

Place tortilla in skillet and spoon pizza sauce on one half of it.

Layer pepperoni over sauce, and sprinkle mozzarella and oregano over pepperoni.

Fold tortilla in half over the filling, coat top lightly with cooking spray and sprinkle with Parmesan.

Cook until mozzarella begins to melt and bottom of tortilla is golden brown, about 2 minutes.

Carefully flip quesadilla and cook until mozzarella is fully melted and Parmesan is golden brown, 1 to 2 minutes longer.
