Cauliflower “Rice” Risotto

 ½ 16 oz pkg Wegmans Cauliflower Puree (Frozen Foods), thawed
 ½ cup water
 1 tbsp fresh lemon juice
 1 tsp salt
 1 lb Wegmans Cauliflower Rice
 2 tbsp talian Classics Grated Parmigiano Reggiano (Cheese Shop)

Add cauliflower puree, water, lemon juice, and salt to bowl; whisk to combine.

Add cauliflower rice and cauliflower puree mixture to saucepan on MED-LOW; stir to combine. Cook, stirring, 5-6 min until hot. Add cheese; stir until melted.
