Asian-Spiced Grilled Pork With Rice Noodles

Yields4 Servings
 12 oz thinly sliced pork loin
 2 tsp Asian-style seasoning (such as McCormick® Perfect Pinch® or five-spice powder)
 ¼ tsp salt
  cup reduced-sodium soy sauce
 ¼ cup water
 3 tbsp lime juice
 1 clove garlic
 minced Serrano chile or jalapeño, sliced into rounds (optional)
 3 cups cooked rice noodles
 1 head romaine lettuce or napa cabbage, shredded
 1 ½ cups cups cilantro leaves
 1 carrot, cut into ribbons with vegetable peeler
 ½ cucumber, cut into ribbons with vegetable peeler

Season pork with spice mix and salt and set aside, or cover and refrigerate up to 24 hours.

Prepare grill for medium-high heat or heat grill pan. Grill pork, turning once until nicely browned, 2 to 3 minutes per side (depending on thickness). Set aside and let rest.

Meanwhile, make dressing: Stir together soy sauce, water, lime juice, garlic and chile (if using). Set aside.

Divide noodles among 4 bowls. Top with lettuce, cilantro, carrot and cucumber. Top with pork and serve with dressing on the side.
