
Season pork with spice mix and salt and set aside, or cover and refrigerate up to 24 hours.
Prepare grill for medium-high heat or heat grill pan. Grill pork, turning once until nicely browned, 2 to 3 minutes per side (depending on thickness). Set aside and let rest.
Meanwhile, make dressing: Stir together soy sauce, water, lime juice, garlic and chile (if using). Set aside.
Divide noodles among 4 bowls. Top with lettuce, cilantro, carrot and cucumber. Top with pork and serve with dressing on the side.
