Turkey Meatballs with Cauliflower Rice

Yields4 Servings
 1 lb lean ground turkey
 1 large egg
 1 package of frozen cauliflower rice
 1 tsp minced garlic
 1 tbsp ketchup
 1 cup Trader Giotto’s Organic Marinara sauce
 ¾ tsp salt
 ½ cup basil
 3 tbsp of fresh parsley, chopped
 1 tsp olive oil

Combine the turkey, egg, cauliflower rice, ketchup, salt, garlic, basil, and parsley in a bowl.

Use a small cookie scoop or tablespoon to scoop the meat out. Form into 16 balls and place on pan.

Heat a skillet with 1 tsp of olive oil and cook meatballs until browned for about 6 minutes flipping halfway through.

Once browned, add marinara sauce to skillet.
