Parmesan-Crusted Chicken Fingers over Caesar Salad

 12 oz hin-sliced boneless, skinless chicken breast, cut into 1″ strips
 1 egg, lightly beaten or 2 tablespoons liquid egg substitute
 ¾ cup grated Parmesan, divided
 ½ cup low-fat plain Greek yogurt
 1 tbsp olive oil
 1 tbsp water
 ½ Juice of ½ lemon
 1 clove garlic, smashed
 8 cups shredded hearty greens, such as romaine, kale or arugula

Preheat oven to 375ºF. Line baking sheet with foil and coat with cooking spray.

Dip chicken in egg or egg substitute and place on prepared pan. Sprinkle with ½ cup of the cheese. Bake until lightly browned, 18 to 20 minutes.

Meanwhile, in blender, combine yogurt, oil, water, lemon juice, garlic and remaining cheese. Blend into a smooth dressing.

In large bowl, toss greens with dressing. Divide among 4 plates, top with chicken, and serve immediatel
