Gluten-Free Mac and Cheese

 1 head cauliflower, broken into florets
 3 tbsp olive oil, divided
 ¼ tsp salt
 8 oz ounces gluten-free elbow macaroni
 ½ cup part-skim ricotta, at room temperature
  cup goat cheese
 ¼ cup grated Parmesan
 2 tsp onion powder
 2 cloves garlic, minced
 1 cup fresh or frozen peas (optional)
 2 tbsp finely chopped parsley, divided
 2 tbsp gluten-free bread crumbs

Preheat oven to 375ºF. Coat 13″ × 9″ baking dish with cooking spray.

On sheet pan, drizzle cauliflower with 2 tablespoons of the oil, sprinkle with salt, and toss to combine. Roast until edges are golden, 15 to 20 minutes.

Meanwhile, prepare pasta per package directions, drain well and set aside.

In large bowl, whisk together cheeses, onion powder, garlic and 1 tablespoon of the parsley. Add pasta, cauliflower and peas (if using) and toss to combine. Transfer to prepared baking dish.

Mix bread crumbs with remaining oil and parsley. Season with freshly ground black pepper to taste. Sprinkle crumbs on top of mac and cheese and bake until golden brown, about 15 minutes.
