Chocolate Cheesecake

Yields12 Servings
 1 oz (1 square) of semisweet baking chocolate
 4 oz low fat cream cheese, room temperature
 ¼ cup sugar
 ¼ cup light sour cream
 1 large egg, room temperature

Preheat oven to 225°F.

Line a muffin pan with cupcake liners.

Melt 1 oz of chocolate in the microwave in 30 second increments. Stir in between until chocolate has melted.

In a bowl, use a hand mixer to beat the cream cheese and sugar.

Add sour cream, and beat until smooth.

Fold in 1 egg with a spoon, and add in melted chocolate until smooth.

Spoon 2 tbsp into each cup.

Bake cups for 50 minutes. Then turn off the oven and allow to sit for 30 minutes.

Shave the remaining chocolate into small pieces using a knife or shredder, and sprinkle over the top before serving.
