Cauli-Creamed Spinach

 ½ tbsp Wegmans Pure Olive Oil
 ½ tbsp minced Wegmans Cleaned & Cut Peeled Shallots
 1 tsp minced Wegmans Cleaned & Cut Peeled Garlic
 ¼ tsp salt, plus additional to taste
 1 pkg (16 oz) Wegmans Cauliflower Puree (Frozen Foods), thawed
 ¼ tsp freshly ground pepper, plus additional to taste
 ¼ tsp Wegmans Organic Ground Nutmeg
 1 pkg (9 oz) Wegmans Fresh Spinach

Heat olive oil in pan on MED-LOW. Add shallot, garlic, and salt. Cook, stirring occasionally, about 2 min, until soft but not browned.

Add cauliflower puree, pepper, and nutmeg; stir to combine. Increase heat to MED-HIGH. Cook, stirring occasionally, 3-4 min, until mixture begins to bubble.

Add half of spinach to pan; stir until wilted. Add remaining spinach; stir until wilted. Season with salt and pepper.
